Indigenous Penang Assam Laksa prepared from natural spices include lemon glass, ginger, galangal, onion, polygonum leaves, tamarind and fish powder. The lemongrass and polygonum leaves masking the smell of fish, slightly sweet and sour from the tamarind, and a hint heat from the chilli and galangal that built up as we devoured it.
