Virgin coconut oil which is high in medium chain fatty acids (MCFA) is naturally resistant to heat damage. Hence, no trans fat will be produced. Unlike polyunsaturated fats which will produce trans fat and become toxic when heated. These MCFA, like lauric acid which is a major fat in coconut oil, are used quickly by the body and do not really have time to be stored as fat. MCFA contain capric acid which is similar to the saturated fat found in human breast milk. Metabolism of MCFA does not require bile acid, and, it is also suitable for people whose gallbladder has been removed.
